I found this recipe on Instagram so thought I would try them. They are a great alternative to tortilla wraps, no carbs and are high in protein with lots of superfood spinach.
To make the wraps you need a blender, I used my nutribullet.
Wrap Recipe:-
2 Handfuls of baby Spinach
2 Eggs
Salt & Pepper
Method:-
Just put all the above in your blender and blits until combined and it becomes a smooth bright green liquid.
Heat a frying pan and add a couple of sprays of fry light (keeps the oil calories to a minimum). Pour in the mixture to cover the base of the pan. I managed to get two wraps out of the mixture but it depends how thick you want them. Once cooked for a couple of minutes both sides, add a filling of your choice. I made a batch of chopped salad that did a few meals and added king prawns to this one.
Salad Idea:-
Shredded raw red cabbage
Cucumber
Plum Tomatoes
Peppers
Spring onions
Kale and Brussell sprouts, finely chopped as an alternative to lettuce (which has little nutritional value and is mainly water)
King Prawns
Dressing of your choice - I used equal parts red wine vinegar, sesame oil and lemon juice.
