Spiced Parsnip Soup

Is there anything more comforting than a warm bowl of soup on a chilly day? We think not. Today, we're bringing you a delightful recipe for Spiced Parsnip Soup, a perfect blend of earthy parsnips and warming spices. This creamy concoction is sure to become a fall and winter favorite, and it's incredibly easy to make.


**Ingredients:**

- 4 large parsnips, peeled and chopped (save peelings for crisp)

- 1 onion, finely chopped

- 1 tablespoon of turmeric

- 1 teaspoon of ground coriander

- 1 teaspoon of ground cumin

- 2 tablespoons of butter

- 1 tablespoon of vegetable oil

- 4 cups of vegetable stock

- Salt and pepper to taste


**Instructions:**


**Step 1: Prep the Parsnips**

Start by peeling and chopping the parsnips into small chunks. This will ensure they cook evenly and blend into a creamy soup.

I made parsnip crips with the peelings, cooking them on a tray in the air fryer then adding a sprinkle of salt.


**Step 2: Sauté the Aromatics**

In a large soup pot, melt the butter and add the vegetable oil over medium heat. Once it's hot, add the finely chopped onion. Sauté the onion until it becomes translucent and slightly caramelized, which usually takes about 5 minutes.


**Step 3: Spice It Up**

Now, it's time to add the magic spices - turmeric, coriander, and cumin. These spices will infuse the soup with warmth and depth of flavor. Stir them into the sautéed onions and let the mixture cook for about a minute. You'll notice the incredible aroma filling your kitchen.


**Step 4: Add the Parsnips**

Introduce the chopped parsnips to the pot. Give them a good stir to coat them with the aromatic spice mixture. This step ensures that the parsnips absorb the flavors before we add the liquid.

**Step 5: Pour in the Vegetable Stock**

Pour the vegetable stock over the parsnips. It should cover the vegetables entirely. If needed, add more stock or water. Bring the mixture to a gentle boil, then reduce the heat and let it simmer. Cover the pot and let it cook for about 20-25 minutes or until the parsnips are tender.


**Step 6: Blend Until Smooth**

Once the parsnips are soft, it's time to transform the mixture into a velvety soup. Using an immersion blender or by transferring the mixture to a blender in batches, puree the soup until it's smooth and creamy. Be cautious when blending hot liquids, and allow the soup to cool slightly if necessary.

**Step 7: Season and Serve**

Taste your soup and season it with salt and pepper to your liking. Remember, seasoning is a personal preference, so adjust accordingly.


Ladle the spiced parsnip soup into bowls, and garnish with a dollop of yogurt, a sprinkle of fresh coriander leaves, or a drizzle of olive oil. Serve with crusty bread or warm naan for a complete and cozy meal.
