Soup Time

I had cereal for breakfast this morning as a change from a boiled egg on toast which I've had a few times this week. I decided to make another soup again for when I get hungry so I'm not tempted to have something bad that I shouldn't have. I thought it might be tastier if I oven-roasted everything this time instead of boiling all the goodness out of the vegetables.


I through everything I had in the fridge into a roasting tin, including the following:-


Celery, Spinach, Tomatoes, peppers, garlic, pesto, oregano, tomato puree, chili and salt & pepper. It looked nice and colourful before it went into the oven...


And I thought when it came out it would look something like this....


Instead, it came out a bit more like this......lol


Anyway despite what it looks like it tasted lush, full of flavour, and very tasty because everything had been over-roasted which I think adds a lot more depth of flavour to vegetables.
