Mothers Day

Well, mum got back from visiting Aunty Joan & Mike in Spain yesterday so me and Kirsty (I know proper grammar is Kirsty and I but I ain't posh lol), decided to treat her to a nice meal with a bit of help from Home-X from my favorite people who are behind the Six by Nico restaurants.


Here is the menu and as it's only for 2 people I bought some extra steak, veg, and dauphinoise potatoes so that Kirsty can have the same (ish) menu.

Everything was pretty straightforward to serve as it was all in little tubs or trays and there was no prep required as everything came ready done. It was just a case of following the instructions and serving it up.


The starter was lovely. Both hot & cold smoked salmon in a lovely creamy dressing, topped with a cucumber and apple jelly.

There were only 2 of the hot & cold smoked salmon pots so I managed to whip up one for Kirsty using what I had available (including a Beanies coffee jar lol). I chopped up some smoked salmon (quick defrost from the freezer) and added some horseradish sauce, mayo, cornichons, lemon juice, and would have added Cucumber pieces if I had any. Instead, I had to substitute with some finely chopped tomatoes to cut through the salmon and creaminess.

The Main course was gorgeous. The truffle cheese & Potato dauphinoise potatoes were melt in the mouth, I could have eaten the full one to myself.


My one criticism was that the veg portion was probably too small for two people. Luckily I had bought extra veg to make a similar meal for Kirsty so ti went a bit further.


I didn't take a pic of the Chocolate Fondants, as I didn't cook them for long enough so they were more like a liquid pudding lol. But I reckon if half the contestants on Masterchef can't manage a fondant, then I won't beat myself up about it.

I did turn the piece of cheese into a much more impressive cheese board though so don't mind sharing a pic of that ;-)

We didn't manage to get mum on the pic as she was too busy relaxing on the sofa in the lounge :-)
