Carrot Cake Baked Oats

Overnight oats are great but they are cold and in the winter you sometimes want somethng warm. So I thought I would give baked oats a try. I found a carrot cake based recipe so thought I would give them a try and I wasn't dissapointed.


Recipe


2 Medium ripe bananas, mashed

2 cup rolled oats

30g vanilla protein powder

1/2 tsp cinnamon

1 flat tsp baking powder

1 medium carrot, grated

1/4 cup pecans/walnuts, crushed

1-2 tbsp honey/maple syrup/ alternative (based on preferences)

2 cups of milk of choice (I used skimmed)


Method


Combined all ingredients in an overn proof dish and bake on 180 degrees for 20-25 mins (or until golden brown on top.


Divide into 8 portions - This should equal 166 cals per portion.


Very filling and great as a cake bar snack or heat up as a warm breakfast. The portions don't look big but trust me they are filling. I put mine in the freezer so I can just ping a portion in the microwave when I want some (labelled of course lol).
